Banana Cake with Buttercream Frosting

This banana cake recipe came from my great grandmother and has been in the family for 100 years. SHORTENING – Crisco has altered their shortening to remove trans fat. This means that it doesn’t hold up in frosting as well as original Crisco. It’s better to use “high ratio” shortening. CAKE FLOUR – I’m often asked if you can use all purpose flour instead. Cake flour has a lower protein content, is more finely milled and is treated so that the starch granules absorb water and swell more readily in…

Chocolate Pecan Cheesecake Pie

This is one of the MOST decadent desserts I make for my husband! It’s so yummy! His three favorite desserts are Pecan Pie, Cheesecake and most anything with Dark Chocolate and this dessert has all three. It seems as though it would be difficult to bake but it really isn’t but the results make it seem like it is! I do make my own pie crust but any frozen deep dish pie crust will do. Ingredients: 1 deep dish pie shell 1 c dark chocolate chips 3 Tbsp whipping cream 8 oz cream…

Southern Fried Okra

Okra can go from lightly browned to black and burnt very quickly, especially if you are using a cast iron skillet which really conducts heat well. You’ll have to flip them over as fast as you can. Not an easy task to do without splashing hot oil on your hands. Just keep telling yourself it’s worth it. Ingredients : 1 lb okra 2 cups buttermilk 2 cups self-rising cornmeal oil Directions: Rinse okra and slice. Discard stems and tips. Pour buttermilk over sliced okra; cover and chill 30 minutes. Remove…

Easiest No Bake Cheesecake

Every time I bake a cheesecake recipe in the oven, the top cracks open and the recipe never works out for me. This is the easiest recipe and it DOES work! Fabulously delicious! Ingredients: 1 graham cracker pie crust 1 pkg softened cream cheese, 8 oz. 1 tsp vanilla 1 can(s) Eagle Brand sweetened condensed milk (do not use a generic brand… generic brands are more watery and the cheesecake won’t set up correctly) 1/2 c lemon juice 1 can(s) favorite pie filling (cherry, strawberry or blueberry), 1 lb. 5 oz. Directions: 1. Beat cream…

Magic Crust Custard Pie

This custard pie is similar to chess pie, but prepared in a wonderfully unique way! It’s not a very sweet dessert. The texture reminds us of flan without the caramel. If you want something sweeter, we’d suggest swapping the milk for heavy cream and the margarine for butter. Also, cinnamon would be delicious sprinkled on top too. Super easy to make, we really liked this custard pie Ingredients : 1/4 c margarine 4 eggs 3/4 c white sugar 1 pinch salt 2 c milk, 2% 2 tsp vanilla extract 1/2…
